Materials

  • 1 duck (cut into 4 pieces)

1. Duck sauce seasoning:

  • 500 ml of water
  • 1 young papaya (to make the duck soft and odorless)
  • 15 cloves of red onion
  • 8 cloves of garlic
  • 10 candlenuts
  • 3 segments of turmeric
  • 3 segments of ginger
  • Bay leaf
  • Lemongrass leaves
  • Langkuas
  • Salt
  • Royco

2. Soy sauce seasoning for spread

  • 2 tablespoons of butter
  • 5 spring onions
  • 3 cloves of garlic
  • 1/2 segment of ginger sufficiently
  • Coriander
  • 10 tablespoons of tamarind water
  • 1/2 segment of brown sugar
  • 5 tablespoons of sweet soy sauce

  1. Cook the water with bay leaves, lemongrass and langkuas and cut young papaya, all the ingredients are smooth, after the water is boiling, enter the duck that has been washed clean, remove the tunggir part so that it doesn't smell musty. Put in the spices, add salt, if you like mecin please add. taste until it tastes salt. cook until cooked and the duck is tender.
  2. Blend all the spread spices / or soy sauce seasoning. Saute with butter when it is fragrant and cooked, add water then add soy sauce, tamarind water and brown sugar add salt and royco to taste. Set aside.
  3. Take the duck that has been covered, roast it over low heat, if I don't have a grill, I use grilled sausages that are usually baked, burn it while smearing with soy sauce until cooked and serve.
  4. Add the lalap, and lime which I steal in the duck to make it tastier and fresher. As well as the chili paste. good luck.
